Vegan Polpette with Broccoli, Potato, and Lupine

Here’s the recipe for our Vegan Polpette with Broccoli, Potato, and Lupine. An easy peasy kind of croquettes, that our Chef Simona frequently makes.

“Generally, no matter when/where I serve this vegan polpette, everyone likes/loves it. Except for my “not so vegan kids”. Apparently there’s something too green about it that bothers their eyes 😳 They’ll get over it… right?

However, teenagers aside, these are versatile patties that you can modify to your liking: depending on taste, seasonality, and… whatever you may have in the fridge. It’s an excellent way to utilize leftovers… Easy peasy indeed!

The ingredients used in this version are broccoli barese, potatoes, pickled lupins and pea flour. About the doses, I did a little bit of guessing, later decoded for this recipe.

Recipe for the Veggies Polpette with Broccoli, Potato, and Lupine

The given doses are – indicatively – for two people, but feel free to double or triple it to your liking! And, since they tend to °disappear° really fast, the best way to keep up with demand is to make large batches. Just get creative and have fun!

Ingredients

  • 150 g potatoes (boiled and mashed)
  • 150 g broccoli (steamed)
  • 50 g lupines (the pickled ones)
  • 1 pinch salt
  • 1 round black pepper
  • Pea flour (or chickpea flour) just enough to compact everything (it acts as binder)

Tools

  • Couple of bowls
  • a cutting board
  • a potato masher
  • a sharp knife
  • a blender
  • an icecream scoop

Directions

  1. Open the lupines container, rinse and soak them in cold water, for at least one hour (two would be better, lupines tend to be salty).
  2. Meanwhile, cook broccoli and potatoes to a soft consistency.
    • I prefer steaming it, but it’s up to you.
  3. Mash the potatoes with a potato masher, and set aside.
  4. Then blend the broccoli until soft, but not too soft. Set aside.
  5. Drain the lupines, peel them and blend the batch to a smooth consistency.
    • If you want a more “crunchy” finish, keep some of the texture.
  6. Next. Place the potatoes, broccoli and lupines in a bowl. Mix everything together with a fork.
    • Or, even better, your hands. This will help you get the consistency just right.
  7. Taste and adjust the seasonings as needed.
    • Depending on how salty your pickled lupines are, you may need to add a little salt (and pepper).

Now, let’s get started on forming those delicious croquettes!

  1. Since the mix should have a nice, soft consistency, scoop the right amount with an icecream scoop. If not, a spoon will do just fine.
    • If the mixture is a bit too soft, no worries! Just add a little pea flour to thicken it up.
    • And if it’s a little too firm, no problem. Just add a touch of vegetable milk (no added sugar).
    • This is especially helpful if you’re baking them, since they can dry out easily. This way, they’ll stay nice and soft.
  2. Dip each patty in pea flour. Press a little bit in the middle — so they resemble to sliders (mini burgers)—and cook them in a skillet (with a little oil), for a few minutes on each side.
    • Be careful not to crowd the pan, better fry them in batches.
    • In case you bake them, just remember to brush a little bit of oil on the surface before you pop it in the oven.

Substitution

Replace the following ingredients, but remember to test the recipe: improvising is very creative, recipe testing helps a lot!

  • Potatoes with the sweet ones;
  • Broccoli with cauliflower, or other vegetables (like carrots, Jerusalem artichokes, cabbage, zucchini);
  • Or add some legumes (borlotti beans, lentils, hulled red lentils).
