Appetibilis Lunch Box: The “Leftovers Quiche”

The zero-waste attitude is the posh translation of “non si butta via niente“, here expressed with a recipe from the series Appetibilis Lunch Box: the Leftovers Quiche.

Besides being an extremely creative process, zero-waste attitude is economically rewarding and politically correct, provided the cook is in the right mood 😉 And, Appetibilis Team is always in the right mood for cooking, no matter what the fridge has to offer.

Our leftover quiche is made with kind of… “schizophrenic” ingredients:

  • rice milk cream, gluten-free puff pastry, peas, for the healthy side;
  • eggs, smoked bacon for the glutton part of our tastebuds.

Quiches are some of the most versatile dishes, they can be expensive or frugal, rich or super healthy. Making one is really simple, and is a great way to use vegetables about to turn bad or leftovers in general. You can throw it together in about 20 minutes, then let the oven do all the work.
