Almond is the basic ingredient for our “Ottimo! Grattugiato”, the variations are: if you use peeled ones you’ll have a finer grating effect, with unpeeled almonds the result will be darker (as in whole meal), just as good.

Ingredients

  • 100 g raw almonds
  • 1 tablespoon nutritional yeast flakes
  • 1 pinch of unrefined sea salt (fine ground)

Directions

  1. Place all ingredients in a high-powered blender.
  2. Mix/pulse until a fine meal is achieved. (Be careful: if you overdo it, it will tend to become a paste).

Variations

  • You can use one part of raw almonds and one part raw cashews,
  • or one part of pumpkin seeds, for a slightly nuttier flavor.
