It’s Vegan Pancakes Time! You know pancakes? Those fluffy, flattish fritters that are the epitome of the American Sunday “breakfast of champions.”

More or less golden on the outside and soft on the inside, traditionally, they are served for breakfast, stacked on top of each other, and usually paired with maple syrup (or bacon and eggs).

Hearing about “Sunday breakfast” you might think it takes a lot of time to make them, when in fact it takes very little time, especially if you have a blender/mixer.

We’ll start with the basics: veg milk and flour, plus a bonus recipe that’s also gluten-free. All – most definitely – plant-based.

Veganizing pancakes is quite simple:

  • The milk can be soy or oat milk (sugar-free please).
    • Simona doesn’t recommend to use rice milk, is not dense enough to achieve the desired texture.
  • Eggs and sugar can be easily omitted.
    • If you use oat milk, its inherent sweetness partially replaces the need for sugar. Least added sugar is best!
  • As for flours, Simona uses all-purpose flour (Italian type 0 or 1), because her children don’t like whole wheat flours.
    • Whole wheat flours absorb liquids differently. If you want to use them, pay close attention to the consistency and add a little vegetable milk, if needed.
  • About the fat. Butter can be replaced by a vegetable oil.
    • Sunflower seeds is good, but it’s up to you. Definitely avoid olive oil.

Basic recipe for vegan pancakes

Ingredients

  • 50 g sunflower seed oil (*)
  • 300 g oat drink/milk – no added sugars or oils
  • 200 g all purpose flour
  • 1 teaspoon organic baking powder
  • agave or maple syrup to taste – for garnish

(*) About the oil – Unless otherwise specified, we use organic and cold-pressed oil like evoo and/or sunflower seed, (the high-oleic type for frying).

Directions

  1. Whisk oil and milk to emulsify while incorporating some air.
  2. Add the (sifted) flour, together with the baking powder, and mix everything together until you get a smooth mixture (not too runny).
    • To avoid risking lumps, help yourself with a strainer.
  3. Heat a good quality nonstick skillet, over medium heat – no need to grease it – and, as soon as it comes to temperature, pour in a small ladleful of the mixture.
  4. Cook for a few minutes on one side, flip and cook the other.
  5. Serve it hot with agave or maple syrup.

Notes, and Variations

  • You can substitute oat drink with soy, or almond drink.
  • Organic spelt is a good alternative to all purpose wheat flour
  • No baking powder? Use half a teaspoon of baking soda + 3 teaspoons of apple cider vinegar. And mix it with the flour, sugar, baking powder, and salt in a boule.
  • If using a blender, put all ingredients in the mug and blend for 15 to 30 seconds.

Bonus Recipe: Banana pancakes (no gluten nor oil)

Only three ingredients, super easy to make, and it’s gluten-free and oil-free!

Ingredients

  • 1 1/2 bananas (ripe)
  • 120 ml vegetable milk (rice/hemp/soy)
  • 240 g whole grain oatmeal (gluten-free)

Directions

  1. Blend everything in a blender until it reaches the consistency of a batter.
  2. Heat a nonstick skillet and cook for 2 minutes per side.

Notes

To obtain the right consistency, let the oatmeal to soak in the milk for couple of hours, before blending.
